Indian cooking is broadly defined into five regional groups. The Northern and Eastern regions have had Mogul influences over the centuries and as such Mogul Emperors encouraged and patronized the development of Mogul cuisine, music, architecture and arts. Persian charcoal-filled clay ovens cooking kebabs, pilau and biryani are typical examples. Spiced vegetable dishes are of the Western region, whilst hot dishes are found mostly in central and Southern regions The dishes prepared by our Head Chef and his team bring you the finest selection incorporating both classic Indian cooking dishes that apply eastern flavours with a western twist .
